Oatmeal-Craisin Cookies

Mmm!
And NO saturated fats so I can eat as many as I want, right?

Recipe:
1/4 cup plus 3 TBS of 'Lighter Bake' (Fruit Puree)     1-1/2 C all-purpose flour
3/4 C firmly packed brown sugar                                1 tsp baking soda
1/2 C granulated sugar                                                 1 tsp ground cinnamon
2-3 egg whites                                                              dash salt
1 tsp vanilla                                                                  3 C quick oats
                                                                                     1/2 C craisins

1. Heat oven to 350 deg. In large bowl, beat Lighter Bake and sugars until creamy.
2. Add egg whites and vanilla; beat well
3. Add combined flour, baking soda, cinnamon and salt; mix well.
4. Add oats and craisins; mix well
5. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. I find parchment paper works well. For a flatter cookie, press dough down a little with fork. Sprinkle with cinnamon if desired.
6. Bake 8-10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire wrack. Cool completely. Store tightly covered.
Makes about 4 dozen cookies

Next... experiment with other spices, I can't wait!

Day Three: River walk and 1/4 mi of The Narrows

It was waaaayyyy too cold to do The Narrows. Water temp: 40F, running at 97 CFS(cubic feet per second) and the air temp in the 40's. I couldn't feel my feet within 5 minutes! I'll have to come back for this one earlier in the season.
